Camping Recipe: Greek Chicken Skewers

Ingredients

  • 2 tbsps olive oil
  • 1 lemon, juiced
  • 1 tbsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp salt
  • 4 boneless skinless chicken thighs
  • 1 small zucchini
  • 1 red onion
  • 14 cherry tomatoes
  • ½ cup prepared tzatziki, store-bought or recipe as follows

Tzatziki Sauce

  • ½ cup Greek yogurt
  • ¼ cucumber, seeds removed & chopped fine
  • 1 tbsp chopped fresh mint
  • 2 cloves garlic, finely minced
  • ¼ tsp salt

Instructions:

  1. Wash and dry all your produce.
  2. Slice your zucchini and a half lengthwise, then cut into 1/4 inch moons.
  3. Chop the red onion.
  4. Zest and juice the lemon.
  5. Remove the seeds from the cucumber and finally chop.
  6. Chop the fresh mint and mince the garlic.
  7. Trim your chicken thighs and cut into 1-inch pieces. Trim your boneless, skinless chicken thighs and cut them into 1-inch pieces.
  8. In a medium bowl, combine olive oil, lemon juice, oregano, garlic powder, and a pinch of salt.
  9. Add the chicken pieces to the marinade and tossed coat. Cover in place in the refrigerator for up to two hours. Stir occasionally.
  10. While the chicken marinades, make your tzatziki sauce. Remove any excess liquid from the cucumber by blotting it with a paper towel.
  11. Combine Greek yogurt, cucumber, mint, garlic, and salt in a small bowl. Stir to combine thoroughly.
  12. Clean and prepare your grill.
  13. Add the marinated chicken to skewers and thread the chopped vegetables onto different skewers.
  14. Once the grill is hot, add all the skewers to the grill to cook. Your vegetables will likely cook much faster than the chicken, so keep an eye on them to avoid overcooking.
  15. Turn the skewers every few minutes to cook evenly. The chicken will need to cook for approximately 3 to 5 minutes per side.
  16. Serve with the tzatziki sauce and a side of rice.
