Spring Recipes: 2 Delicious Spring Recipes

Cheesy Pasta

Ingredients:

  • 2 tbsp salt, plus more to taste
  • 1 lbs spaghetti
  • 3 tbsp olive oil
  • 4 cloves garlic, thinly sliced
  • 1 tsp red pepper flakes
  • 2 tbsp butter, salted or unsalted
  • juice of half a lemon
  • 3/4 c. finely grated Parmesan cheese, plus more for serving
  • 1 c. reserved pasta cooking water
  • freshly ground pepper, to taste
  • a few pinches chopped parsley, for serving

Instructions:

  1. Cook pasta according to package instructions cooking only cooking for approximately 8 minutes to ensure the pasta is al dente.
  2. While pasta is cooking, heat a drizzle of oil in a large pan over medium head.
  3. Add garlic and cook, stirring constantly for 3 minutes until golden brown.
  4. Reduce heat to low and stir in red pepper flakes.
  5. When pasta is cooked, transfer with tongs to the garlic mixture using tongs and stir to coat the pasta.
  6. Add butter and lemon juice, continuing to stir until thoroughly melted.
  7. Next, add cheese and 1 cup of pasta cooking water. Stir vigorously until cheese is melted and coats the pasta in a smooth sauce. Add more water as needed.
  8. Salt and pepper to taste.

Honey Lemon Chicken Thighs

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • salt and pepper, to taste
  • 1-2 tbsp olive oil
  • 5-6 cloves garlic, peeled
  • 1 tbsp butter
  • juice of half of a lemon
  • 1 1/2 tbsp honey
  • 1-2 tbsp fresh parsley, stems removed and chopped

Instructions:

  1. Preheat your oven to 425F.
  2. Pat chicken dry with a paper towel and season all over with salt and pepper.
  3. Drizzle with olive oil on the side with the skins.
  4. Heat a cast iron skillet over medium heat and when the pan is hot, add the chicken thighs skin-side down.
  5. Cook chicken for 15 minutes until brown and crispy, rotating every 5 minutes to cook evenly.
  6. Remove the chicken from the heat and set it aside to rest.
  7. Add butter, lemon juice, and honey to the skillet with the garlic mix and stir, deglazing the pan over low heat.
  8. Spoon the sauce over the chicken and serve with the pasta from above.
